Lemony Chicken Casserole Recipe

I love this chicken casserole recipe of my mom's... 
 
Ingredients:
3 chicken breasts
2 cans cream of chicken soup
8 oz sour cream
1/2 tablespoon lemon juice
1 sleeve of Ritz crackers
1/2 stick melted butter
a little bit of pepper (about 1/4 teaspoon)
*FYI - salt isn't really needed as it's in the soup*
 
Directions:
Cook 3 chicken breasts and either chop or shred them.
Mix the chicken, sour cream, cream of chicken soup, pepper
and the lemon juice together. Put in a lightly greased
baking dish. Crumble ritz crackers on top, then pour the
melted butter over the crackers. Bake at 350 degrees for
about 30 minutes, until it's bubbly and the crackers are browned.
 
If you want to make the casserole ahead of time, just
leave off the crackers and butter until it's time to bake.

Don't let the name fool you.... it really doesn't have a strong
lemon taste - I promise!
